Auctions and more low-carb treats

Anyway, remember the recipe for truffle balls I posted around Hallowe'en? I've been trying to come up with a version that doesn't use erythritol. Well - I haven't quite gotten that yet. But here's what the "failures" turned into:


Low-carb pudding and brownies.
The recipes are almost the same. The biggest difference, of course, is that one is baked and one is not.
Pudding:
2 egg whites*
¼ cup whipping cream
2 tbsp DaVinci® Sugar Free Syrup or other sugar-free syrup
1 cup chocolate whey protein powder
½ cup cocoa
½ cup stevia (cup for cup)
⅓ cup coconut oil, melted
1 tbsp butter, melted
½ cup unsweetened desiccated coconut or to taste (optional)
*Because the pudding is uncooked I recommend using pasteurized egg whites.
Using an electric mixer, Whip the cream a bit, then mix in the syrup, cocoa, stevia, and protein powder. Add in the melted coconut oil and butter and mix. Using clean beaters, whip the egg whites to a foam, then fold into the chocolate mixture. Pour into dessert cups and chill until set, about 1-2 hours. It makes about 8 servings, each with 11g protein, 16.3g fat, and 3.7g carb.
Brownies:
The "brownies" are somewhere between merengue cookies and brownies in texture. The guar gum isn't strictly necessary, they'll just be a little denser without it.

1 cup chocolate whey protein powder
½ cup cocoa
½ cup stevia (cup for cup)
⅓ cup coconut oil, melted
1 tbsp butter, melted
~¼ guar gum
½ cup unsweetened desiccated coconut or to taste (optional)
Using an electric mixer, Whip the cream a bit, then mix in the syrup, cocoa, stevia, and protein powder. Stir the guar gum into the melted coconut oil, then add the coconut oil and butter to the mix. Using clean beaters, whip the egg whites to soft peaks, then fold into the chocolate mixture. Spoon into muffin cups - silicone ones work great - and bake at 325° for 10-12 minutes or until the tops are dry. It makes 12 brownies, each with 7.4g protein, 10.9g fat, and 2.45g carb.
